"Racines" - April edition of the Pâtisserie Box

In French we have a special name for local products, “produits du terroir”. It carries a profound meaning: we don’t only eat a local product and ingredient, we savour it, we anticipate it and appreciate it. It is celebrated and being enjoyed in full acknowledgement of its roots.

In homage to the Pacific region and Aotearoa, I reinterpreted these French desserts with les produits du terroir of the Pacific and Aotearoa: the vanilla is from Tonga, the chocolate from Papua New Guinea, the Kawakawa, Horopito and sea salt from Aotearoa, and the feijoa and lemon are local and seasonal.

While the previous Bouche Box celebrated Heritage, this one expresses my deepest gratitude to growing new roots, hence the name Racines. Thank you for adopting me as tauiwi and tangata Tiriti. I’m honoured to be among you in this magical whenua and will never take it for granted.

🎀 This pâtisserie box contains 4 desserts:

  • Wanira: Amatika Blanche chocolate mousse and vanilla beans from Tonga, vanilla moelleux, vanilla and praliné croustillant, piped with vanilla chantilly cream and a heart of almond and hazelnut praliné

  • Charlotte Feijoa: Poached baked Feijoas compote, tonka and vanilla cream, vanilla ladyfinger cake

  • Royal Horopito (GF): Chocolate mousse with a soft Horopito bite, croustillant praliné, Chocolate rocher glaze, moelleux biscuit

  • Financier tigré Kawakawa - Lemon: Kawakawa and almond financier, lemon crémeux, heart of crème caramel

Every single element of these desserts are house-made with the highest quality ingredients and from scratch, from the praliné to the caramel, to the diverse creams and compote. Entirely vegan. 🌱

Beautifully presented in a box, with a menu card with the description of each dessert.

Hand-delivered personally on Friday the 24th of April from 11AM to 2PM, and Saturday the 25th of April from 10AM to 6PM.
